How to Make Homemade Kalguksu (Korean Knife-Cut Noodles)

As the weather gets chilly, nothing beats a warm, comforting bowl of soup. Today, I’m going to share an easy homemade kalguksu recipe with you!
With chewy noodles and a rich, flavorful broth, this Korean knife-cut noodle soup is the perfect comfort food. Let’s get started! ✨


🛒 Ingredients (Serves 2)

For the Noodles:

✔ 2 cups all-purpose flour (or medium-strength flour)
✔ ½ cup water
✔ ½ teaspoon salt
✔ 1 tablespoon potato starch (optional, for extra chewiness)
✔ 1 teaspoon sesame oil (for the dough)

For the Broth:

✔ 10 dried anchovies (gutted)
✔ 1 piece of dried kelp (5cm square)
✔ 100g radish (sliced)
✔ ½ onion
✔ 1 green onion
✔ 3 cloves garlic
✔ 1 tablespoon soy sauce for soup
✔ Salt and pepper to taste

Additional Ingredients (Optional)

✔ 1 potato (thinly sliced)
✔ ½ zucchini (julienned)
✔ Some carrot slices


👩‍🍳 How to Make Kalguksu

1️⃣ Make the Noodle Dough

① In a bowl, mix flour, salt, sesame oil, and water to form a dough.
② Knead the dough for 15-20 minutes until smooth and elastic.
③ Cover with plastic wrap and let it rest for 30 minutes at room temperature.
④ Once rested, roll out the dough thinly with a rolling pin and cut it into strips. Dust with flour to prevent sticking.

2️⃣ Prepare the Broth

① In a pot, add 1.2L of water, anchovies, kelp, radish, onion, green onion, and garlic.
② Once it starts boiling, remove the kelp after 10 minutes and the anchovies after 20 minutes.
③ Season the broth with soy sauce and salt to taste.

3️⃣ Cook the Noodles

① Once the broth is ready, add the potatoes, zucchini, and carrots, and let them cook.
② Drop the freshly cut noodles into the boiling broth and cook for 3-4 minutes until they become soft and chewy.
③ Serve in a bowl, sprinkle with some black pepper, and enjoy!


💡 Tips to Make Your Kalguksu Even Better!

Pair it with kimchi for an amazing flavor combination.
Add perilla seed powder or chili flakes for a deeper, more aromatic taste.
Let the dough rest longer for extra chewy noodles.
