How to Make Delicious Japchae at Home

📌 Ingredients (Serves 4)

Glass noodles (Dangmyeon) – 200g
Beef (or pork) – 150g
Spinach – 1/2 bunch
Carrot – 1/2 piece
Onion – 1/2 piece
Shiitake mushrooms – 3-4 pieces (or other mushrooms)
Bell pepper (optional) – 1/2 piece
Egg – 1 (for egg garnish)
Cooking oil, sesame oil, sesame seeds – as needed

✨ Sauce for Beef & Noodles

✔ Soy sauce – 5 tbsp
✔ Sugar – 2 tbsp
✔ Minced garlic – 1 tbsp
✔ Sesame oil – 1 tbsp
✔ Black pepper – a pinch


🍳 How to Make Japchae

1️⃣ Preparing the Glass Noodles

  1. Soak the glass noodles in warm water for 30 minutes to 1 hour.
  2. Boil water and cook the noodles for 4-5 minutes, then rinse under cold water.
  3. Drain the noodles and mix them with 2 tbsp soy sauce, 1 tbsp sugar, and 1 tbsp sesame oil. Set aside.

2️⃣ Prepping & Stir-Frying the Ingredients

  1. Slice the beef into thin strips and marinate with 2 tbsp soy sauce, 1 tbsp sugar, 1/2 tbsp minced garlic, and 1/2 tbsp sesame oil. Let it sit for 10 minutes.
  2. Blanch the spinach in boiling water for a few seconds, then rinse under cold water. Squeeze out excess water and season with a little salt and sesame oil.
  3. Julienne the onion, carrot, mushroom, and bell pepper, then stir-fry each vegetable separately over medium heat.
  4. Beat the egg and cook it into a thin sheet. Slice it into thin strips for garnish.

  1. In a large mixing bowl, add the noodles, stir-fried ingredients, spinach, and egg strips.
  2. Add 1 tbsp soy sauce, 1 tbsp sesame oil, and a sprinkle of sesame seeds, then gently toss everything together.
  3. Taste and adjust the seasoning if needed—add more soy sauce or sugar if desired.
