📌 Ingredients (Serves 4)
✅ Glass noodles (Dangmyeon) – 200g
✅ Beef (or pork) – 150g
✅ Spinach – 1/2 bunch
✅ Carrot – 1/2 piece
✅ Onion – 1/2 piece
✅ Shiitake mushrooms – 3-4 pieces (or other mushrooms)
✅ Bell pepper (optional) – 1/2 piece
✅ Egg – 1 (for egg garnish)
✅ Cooking oil, sesame oil, sesame seeds – as needed

✔ Soy sauce – 5 tbsp
✔ Sugar – 2 tbsp
✔ Minced garlic – 1 tbsp
✔ Sesame oil – 1 tbsp
✔ Black pepper – a pinch
🍳 How to Make Japchae
1️⃣ Preparing the Glass Noodles
- Soak the glass noodles in warm water for 30 minutes to 1 hour.
- Boil water and cook the noodles for 4-5 minutes, then rinse under cold water.
- Drain the noodles and mix them with 2 tbsp soy sauce, 1 tbsp sugar, and 1 tbsp sesame oil. Set aside.
2️⃣ Prepping & Stir-Frying the Ingredients
- Slice the beef into thin strips and marinate with 2 tbsp soy sauce, 1 tbsp sugar, 1/2 tbsp minced garlic, and 1/2 tbsp sesame oil. Let it sit for 10 minutes.
- Blanch the spinach in boiling water for a few seconds, then rinse under cold water. Squeeze out excess water and season with a little salt and sesame oil.
- Julienne the onion, carrot, mushroom, and bell pepper, then stir-fry each vegetable separately over medium heat.
- Beat the egg and cook it into a thin sheet. Slice it into thin strips for garnish.

- In a large mixing bowl, add the noodles, stir-fried ingredients, spinach, and egg strips.
