🛒 Ingredients (Serves 2–3)
✔ Main Ingredients
- 200g glass noodles (sweet potato starch noodles)
- 1/2 bunch of spinach
- 1/2 carrot (julienned)
- 1/2 onion (thinly sliced)
- 3–4 shiitake mushrooms (or wood ear mushrooms)
- 1/4 red bell pepper & 1/4 yellow bell pepper (optional)
- 1/2 green onion (sliced)
- Cooking oil
✔ Meat Marinade (for 150g beef or pork)
- 1 tbsp soy sauce
- 1/2 tbsp sugar
- 1 tsp minced garlic
- 1 tsp sesame oil
- A pinch of black pepper
✔ Japchae Sauce
- 3 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp corn syrup (or honey)
- 1 tbsp sesame oil
- 1 tsp minced garlic
- Sesame seeds for garnish
🍳 How to Make It
1️⃣ Prepare & Cook the Noodles
- Boil the glass noodles in hot water for 6–8 minutes (follow package instructions).
- Rinse under cold water and drain well.
- Toss with 1 tsp sesame oil to prevent sticking and keep them chewy.
2️⃣ Cook the Meat & Vegetables
- Marinate the meat: Mix the beef (or pork) with the marinade ingredients and let it sit for 10 minutes.
- Heat oil in a pan and stir-fry each vegetable separately to keep their texture crisp.
- Blanch the spinach in boiling water for 30 seconds, rinse under cold water, squeeze out excess moisture, and season with 1/2 tbsp soy sauce & 1/2 tsp sesame oil.
- Stir-fry the marinated meat until fully cooked.
3️⃣ Mix Everything Together
- In a large bowl, combine the noodles, vegetables, and meat.
- Add the Japchae sauce and gently toss everything together until evenly coated. (Be careful not to break the noodles!)
- Sprinkle with sesame seeds, and it’s ready to serve!
