How to Make Homemade Sujebi – Chewy Korean Hand-Pulled Noodle Soup!

Hello, food lovers! 😊 Today, I’m sharing a comforting and delicious Sujebi recipe. This traditional Korean hand-pulled noodle soup features a rich, savory broth with chewy dough pieces, making it the perfect meal for a chilly day. Let’s make this warm and hearty dish together! ✨


🛒 Ingredients (Serves 2–3)

✔ Sujebi Dough

  • 2 cups all-purpose flour
  • 2/3 cup water
  • 1/2 tsp salt
  • 1 tsp cooking oil

✔ Broth Ingredients

  • 10 dried anchovies (gutted)
  • 1 piece dried kelp (5x5cm)
  • 6 cups water
  • 1 potato (thinly sliced)
  • 1/2 onion (sliced)
  • 1/2 zucchini (sliced into half-moons)
  • A small amount of carrot (optional)
  • 1 green onion (sliced)
  • 1 tbsp minced garlic
  • 2 tbsp soy sauce
  • Salt & black pepper (to taste)

🍳 How to Make It

1️⃣ Make the Sujebi Dough

  1. In a bowl, mix flour, salt, and cooking oil.
  2. Gradually add water while kneading the dough for about 5–7 minutes until smooth.
  3. Cover with plastic wrap or a damp cloth and let it rest for at least 30 minutes. (This makes the dough chewy!)

2️⃣ Prepare the Broth

  1. Add water, dried anchovies, and kelp to a pot. Simmer over medium-low heat for 10–15 minutes.
  2. Remove the kelp after 10 minutes and strain out the anchovies, leaving only the clear broth.

3️⃣ Add Vegetables & Seasoning

  1. Add potato, onion, zucchini, and carrot to the broth and let them cook.
  2. Stir in soy sauce and minced garlic to enhance the flavor.

4️⃣ Hand-Tear the Dough into the Soup

  1. Take the rested dough and stretch it into thin, bite-sized pieces.
  2. Drop each piece directly into the boiling broth.
  3. Once the dough pieces float, cook for an additional 5 minutes until fully cooked.
  4. Add green onions and adjust the seasoning with salt and pepper to taste.
