- 6 cups water
- 1 potato (thinly sliced)

- 1 green onion (sliced)
- 1 tbsp minced garlic
- 2 tbsp soy sauce
- Salt & black pepper (to taste)

1️⃣ Make the Sujebi Dough
- In a bowl, mix flour, salt, and cooking oil.
- Gradually add water while kneading the dough for about 5–7 minutes until smooth.
- Cover with plastic wrap or a damp cloth and let it rest for at least 30 minutes. (This makes the dough chewy!)
2️⃣ Prepare the Broth
- Add water, dried anchovies, and kelp to a pot. Simmer over medium-low heat for 10–15 minutes.
- Remove the kelp after 10 minutes and strain out the anchovies, leaving only the clear broth.
3️⃣ Add Vegetables & Seasoning
- Add potato, onion, zucchini, and carrot to the broth and let them cook.
- Stir in soy sauce and minced garlic to enhance the flavor.
4️⃣ Hand-Tear the Dough into the Soup
- Take the rested dough and stretch it into thin, bite-sized pieces.
- Drop each piece directly into the boiling broth.
- Once the dough pieces float, cook for an additional 5 minutes until fully cooked.
- Add green onions and adjust the seasoning with salt and pepper to taste.
