🛒 Ingredients (Serves 2)

  • 2 servings of fresh noodles
  • 1/2 cucumber (julienned)
  • 1/2 carrot (julienned)
  • 4 leaves of lettuce (or perilla leaves, optional)
  • 2 boiled eggs (optional)

For the Sauce:

  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp gochugaru (Korean red chili flakes)
  • 1/2 tbsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp minced garlic
  • 1 tsp sesame oil
  • 2 tbsp water
  • Sesame seeds (optional, for garnish)

🍳 Instructions

1️⃣ Cook the Noodles

  1. Boil water in a large pot and cook the noodles for about 4-5 minutes.
  2. Once the noodles are cooked, rinse them under cold water to cool them down and keep the noodles chewy.

2️⃣ Prepare the Sauce

  1. In a bowl, mix gochujang, gochugaru, sugar, soy sauce, vinegar, and minced garlic.
  2. Add 2 tablespoons of water and mix until the sauce is smooth.
  3. Drizzle in 1 teaspoon of sesame oil for a rich, nutty aroma.

3️⃣ Prepare the Vegetables

  1. Julienne the cucumber and carrot.
  2. Wash the lettuce thoroughly and cut it into 4 portions.
  3. If you like, you can boil the eggs and slice them in half for garnish.

4️⃣ Assemble the Bibim Noodles

  1. Place the cooled noodles in a bowl and add the sauce. Toss well to coat the noodles evenly with the sauce.
  2. Top the noodles with the prepared vegetables and boiled egg halves.
  3. Garnish with sesame seeds if you’d like for added crunch and flavor.
