Spicy Dried Squid Stir-fry (Jinmi-chae Bokkeum) – A Perfect Snack or Side Dish for Drinks

Hello everyone! 😊 Today, I’m sharing a recipe for Spicy Dried Squid Stir-fry (Jinmi-chae Bokkeum), a delicious and spicy dish that’s perfect as a snack with drinks or as a side dish. The chewy dried squid combined with a spicy and sweet seasoning makes it incredibly tasty. It's super easy to make at home, so give it a try! 🍽️✨


🛒 Ingredients (Serves 2)

  • 100g dried squid (Jinmi-chae)
  • 1/2 onion (sliced)
  • 1 stalk green onion (sliced diagonally)
  • 1 green chili (optional, if you like extra heat)

For the Marinade:

  • 1 tbsp gochujang (Korean red chili paste)
  • 1 tbsp gochugaru (Korean red chili flakes)
  • 1 tbsp soy sauce
  • 1/2 tbsp sugar
  • 1 tsp minced garlic
  • 1 tbsp vegetable oil
  • 2 tbsp water
  • 1 tsp sesame oil
  • Toasted sesame seeds (optional, for garnish)

🍳 Instructions

1️⃣ Rehydrate the Dried Squid

  1. Rinse the dried squid under cold water and soak it in warm water for about 10 minutes to soften.
  2. Once the squid is rehydrated, drain it well and cut it into bite-sized pieces.

2️⃣ Make the Marinade

  1. In a bowl, combine gochujang, gochugaru, soy sauce, sugar, and minced garlic.
  2. Add 2 tablespoons of water and mix everything well. If the marinade is too thick, add a little more water to adjust the consistency.

3️⃣ Stir-fry the Ingredients

  1. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the onion and green onion and sauté until the onions become translucent.
  2. Add the rehydrated dried squid to the pan and stir-fry for a few minutes until it’s heated through.
  3. Pour the marinade over the squid and stir to coat evenly. Let it cook for about 2-3 minutes, allowing the squid to absorb the flavors of the marinade.

4️⃣ Finish and Serve

  1. Drizzle 1 teaspoon of sesame oil over the stir-fry for a rich, nutty flavor.
  2. Garnish with toasted sesame seeds for a little extra crunch and aroma. Serve hot and enjoy!

🏆 Tips for Perfect Spicy Dried Squid Stir-fry

Don’t soak the squid for too long. About 10 minutes is enough to rehydrate it without losing its texture.
Add more chili if you prefer a spicier dish. You can also add a green chili for extra heat.
Sesame oil adds a nice finish. Add it at the end for the best aroma and flavor.
