- Wash the sweet potatoes thoroughly and peel the skin off.
- Cut them into bite-sized pieces (about 2–3 cm thick).
- Soak the sweet potato pieces in cold water for 10–15 minutes to remove excess starch. (This helps make them crispier!)
2️⃣ Deep-Frying the Sweet Potatoes
- Drain the soaked sweet potatoes and pat them dry with a paper towel.
- Heat the oil in a pan over medium heat (160–170℃ or 320–340℉).
- Fry the sweet potatoes until they turn golden brown and crispy.
- Remove from the oil and drain on a paper towel.
3️⃣ Making the Sweet Glaze
- In a pan, combine 3 tbsp sugar, 3 tbsp corn syrup, 1 tbsp water, and a pinch of salt.
- Heat over medium-low heat, stirring occasionally until the sugar melts and forms a golden caramel.
- Be careful not to overcook, or the glaze will harden too quickly!

- Add the fried sweet potatoes into the caramel glaze and quickly toss them to coat evenly.
